Execution
First, wash the vegetables and place them on a baking tray to see how many you will need. Cut off the lids and carefully scoop out the flesh with a small spoon or the special tool. On the tomatoes you will need to sprinkle the inside with a little sugar.
Grate or finely chop the vegetable filling in a bowl. Add the grated onions. I would like to suggest you use the seeds from the peppers as well, they will give excellent flavor.
Add the rice, finely chopped mint and parsley, the spices and finally the 100ml olive oil and the lemon juice. Mix very well and start filling the vegetables up to ¾ full.
In the baking pan, add a little salt to the outside of the vegetables and add the remaining olive oil and half a cup of water.
To make a crust, add some breadcrumbs or scratch cheese.
Cover with greaseproof paper and aluminum foil and bake at 180 degrees for one hour. 10 minutes before it is ready uncover to brown.
