QUALITY STARTS WITH THE OLIVE TREES
Harvesting olive fruit requires passion, dedication and special knowledge. The pickers select the fruits that have reached the right degree of ripeness and have the right quality for the production of olive oil.
The fruit is then collected in large baskets and transported to the mill.
The olive fruit is usually harvested in early autumn, in October and November, when the fruit has reached the right degree of ripeness. Harvesting is usually done manually, so as not to disturb the tree and to protect the fruit.
